1、馬賽魚羹(Bouillabaisse)

馬賽魚羹是一道法式菜肴。主要原料是新鮮的魚及海鮮?。里面最主要的材料都是當?shù)卦偌由弦恍┫懔霞胺厌u汁烹煮而成的。

2、烤火雞(Roast turkey)

烤火雞是一道菜品,制作原料主要有北美洲的家禽火雞等??净痣u在西方人的感恩節(jié)和圣誕節(jié)餐桌上必不可少的一道菜。人們用于烤火雞的工具,主要是電烤箱或者更原始的木炭。

此菜起源于1620年,英國移民為了感謝救助他們的印第安人,移民們舉行了豐盛的感恩會,用烤火雞和玉米糕點款待印第安人。

3、羅宋湯(Russian soup)

羅宋湯是發(fā)源于烏克蘭的一種濃菜湯。羅宋湯大多以甜菜為主料,常加入馬鈴薯、紅蘿卜、菠菜和牛肉塊、奶油等熬煮,因此呈紫紅色。

有些地方以番茄為主料,甜菜為輔料。也有不加甜菜加番茄醬的橙色羅宋湯和綠色羅宋湯。

4、黃油雞卷(chicken roll with butter)

黃油雞卷所屬一款美食,主要原料有雞脯肉750克,雞腿肉100克,黃油250克,炸土豆絲500克,龍須菜250克,煮菜花250克,煮胡蘿卜條250克,面包糠250克等,這道菜非常美味。

5、雞丁沙拉(chicken salad)

雞丁沙拉是以熟雞丁、去皮熟馬鈴薯、熟豌豆、番茄、沙拉油為主要原料制成的沙拉。菜品色彩鮮艷,鮮美嫩滑,清香宜人。富含各種維生素,有多中礦物質,微量元素有許多。

正式的全套餐點上菜順序是:

①前菜和湯②魚③水果④肉類⑤乳酪⑥甜點和咖啡⑦水果,還有餐前酒和餐酒。

沒有必要全部都點,點太多卻吃不完反而失禮。稍有水準的餐廳都歡迎只點前菜的客人。前菜、主菜(魚或肉擇其一)加甜點是最恰當?shù)慕M合。

點菜并不是由前菜開始點,而是先選一樣最想吃的主菜,再配上適合主菜的湯。

一主六配――西餐點菜法

西餐在菜單的安排上與中餐有很大不同。以舉辦宴會為例,中餐宴會除近10種冷菜外,還要有熱菜6-8種,再加上點心甜食和水果,顯得十分豐富。而西餐雖然看著有6、7道,似乎很繁瑣,但每道一般只有一種,下面我們就將其上菜順序作一簡單介紹,希望對您初到西餐廳點菜時能有所幫助。

1、頭盤

西餐的第一道菜是頭盤,也稱為開胃品。開胃品的內容一般有冷頭盤或熱頭盤之分,常見的品種有魚子醬、鵝肝醬、熏鮭魚、雞尾杯、奶油雞酥盒、局蝸牛等。因為是要開胃,所以開胃菜一般都具有特色風味,味道以咸和酸為主,而且數(shù)量較少,質量較高。

2、湯

與中餐有極大不同的是,西餐的第二道菜就是湯。西餐的湯大致可分為清湯奶油湯、蔬菜湯和冷湯等4類。品種有牛尾清湯、各式奶油湯、海鮮湯、美式蛤蜊周打湯、意式蔬菜湯、俄式羅宋湯、法式局蔥頭湯。冷湯的品種較少,有德式冷湯、俄式冷湯等。

3、副菜

魚類菜肴一般作為西餐的第三道菜,也稱為副菜。品種包括各種淡、海水魚類、貝類及軟體動物類。通常水產類菜肴與蛋類、面包類、酥盒菜肴品均稱為副菜。因為魚類等菜肴的肉質鮮嫩,比較容易消化,所以放在肉類菜肴的前面,叫法上也和肉類菜肴主菜有區(qū)別。西餐吃魚菜肴講究使用專用的調味汁,品種有韃靼汁、荷蘭汁、酒店汁、白奶油汁、大主教汁、美國汁和水手魚汁等。

4、主菜

肉、禽類菜肴是西餐的第四道菜,也稱為主菜。肉類菜肴的原料取自牛、羊豬、小牛仔等各個部位的肉,其中最有代表性的是牛肉或牛排。牛排按其部位又可分為沙朗牛排(也稱西冷牛排)、菲利牛排、“T”骨型牛排、薄牛排等。其烹調方法常用烤、煎、鐵扒等。肉類菜肴配用的調味汁主要有西班牙汁、濃燒汁精、靡菇汁、白尼斯汁等。

食類菜肴的原料取自雞、鴨、鵝,通常將兔肉和鹿肉等野味也歸入禽類菜肴禽類菜肴品種最多的是雞,有山雞、火雞、竹雞、可煮、可炸、可烤、可燜,主要的調味汁有黃肉汁、咖喱汁、奶油汁等。

5、蔬菜類菜肴

蔬菜類菜肴可以安排在肉類菜肴之后,也可以與肉類菜肴同時上桌,所以可以算為一道菜,或稱之為一種配菜。蔬菜類菜肴在西餐中稱為沙拉。與主菜同時服務的沙拉,稱為生蔬菜沙拉,一般用生菜、西紅柿、黃瓜、蘆筍等制作。沙拉的主要調味汁有醋油汁、法國汁、干島汁、奶酪沙拉汁等。

沙拉除了蔬菜之外,還有一類是用魚、肉、蛋類制作的,這類沙拉一般不加味汁,在進餐順序上可以做為頭盤食用。

還有一些蔬菜是熟食的,如花椰菜、煮菠菜、炸土豆條。熟食的蔬菜通常是與主菜的肉食類菜肴一同擺放在餐盤中上桌,稱之為配菜。

6、甜品

西餐的甜品是主菜后食用的,可以算做是第六道菜。從真正意義上講,它包括所有主菜后的食物,如布丁、煎餅、冰淇淋、奶酪、水果等等。

7、咖啡、茶

西餐的最后一道是上飲料,咖啡或茶。飲咖啡一般要加糖和淡奶油。茶一般要加香桃片和糖。

西餐禮儀

雖然最近在國內也相當盛行吃西餐,但是在內容和形式上,隨著各餐廳的經營型態(tài)而「純」、「雜」不等,「繁」、「簡」不一,十分值得一談。

美國的西餐,和歐洲許多國家也頗有不同。如果您到美國旅游,赴家庭宴會或在餐館吃「正餐」時,請先注意下列一般原則:

男女一起在餐館用餐,通常由男方負責點菜(order)和付帳(pay the check or bill)。

許多基督教或天主教家庭飯前要由家中一員帶領禱告(say a prayer or blessing),您即使不信教,也請跟著低頭,以示禮貌和尊重。

美國人宴客,是由女主人(或男主人)先拿起餐具進食,客人才跟著動餐具。

如果您不喜歡遞過來的菜肴時,只要說No, thank you.即可。

咀嚼食物,一定要避免出聲。

用過的刀、叉,必須放回盤子里,不能放在餐桌巾上。

吃完主菜,把刀和叉平行地斜放在主菜盤(main plate)上,是向主人或侍者表示可以把主菜餐盤拿走了。

席間要輕聲談些輕松愉快的話題,盡量避免一聲不響地悶著頭吃飯。

Hostess: Would you like to have some more chicken ?

Guest: No, thank you. The chicken is very delicious, but I'm just too full.

Host: But I hope you saved room for dessert. Mary makes very good pumpkin pies.

Guest: That sounds very tempting. But I hope we can wait a little while, if you don't mind.

Host: Of course. How about some coffee or tea now ?

Guest: Tea, please. Thanks.

★餐位(Seating arrangement)

餐位的安排大致上如上圖。原則上男主賓(Gentleman of honor)坐在女主人(hostess)右邊,女主賓(lady of honor )坐在男主人(host)右邊,而且多半是男女相間而坐,夫婦不坐在一起,以免各自聊家常話而忽略與其他賓客間的交際。

★餐具擺法

家庭或餐廳宴會時,餐具的種類和數(shù)量,因餐會的正式(formal)程度而定。越正式的餐會,刀叉盤碟擺得越多。本文所舉的例子,適用于不十分正式的宴會(多數(shù)家庭式宴會屬于此類)。

叉子(forks)放在主菜盤(main plate)左側,刀子(knives)、湯匙(spoons)擺在右側。

刀叉和湯匙依使用的先后順序排列。最先用的放在離主菜盤最遠的外側,后用的放在離主菜盤近內側。假如主人決定先上主菜再上沙拉,就要把主菜叉子放在沙拉叉子的外側。

沙拉盤放在靠主菜盤的左邊。美國人通常把主菜和沙拉一起送上桌來,而不像法國人一樣,主菜吃完以后才上沙拉。

★一般餐具擺設圖(午宴、晚宴均適用)
